The English recipe for Mapo Tofu is simple and easy to learn.
Ingredients
- 1 block of soft tofu
- 100g minced meat (pork or beef)
- 2 – 3 cloves of garlic
- 1 piece of ginger
- 2 – 3 scallions
- 2 tablespoons of Pixian broad – bean paste
- 1 tablespoon of chili powder
- 1/2 tablespoon of sugar
- 1 tablespoon of light soy sauce
- 1/2 tablespoon of dark soy sauce
- Appropriate amount of salt and pepper
- 2 – 3 tablespoons of water – starch
- Appropriate amount of cooking oil
Steps
- Cut the soft tofu into small cubes and blanch them in boiling water for about 2 minutes. Then drain the water and set the tofu aside. This step can remove the beany smell of the tofu and make it more tender.
- Mince the garlic and ginger, and cut the scallions into sections.
- Heat some cooking oil in a pan over medium – high heat. Add the minced meat and stir – fry until it changes color. Then push the minced meat to the side of the pan.
- Add the minced garlic and ginger to the empty part of the pan, and stir – fry until fragrant. Then add 2 tablespoons of Pixian broad – bean paste and stir – fry until the oil turns red.
- Mix the chili powder, sugar, light soy sauce, and dark soy sauce in a small bowl, and then pour the sauce into the pan. Stir well with the minced meat and seasonings.
- Add an appropriate amount of water to the pan, bring it to a boil, and then reduce the heat to low.
- Gently put the blanched tofu cubes into the pan, and use a spatula to gently stir to make the tofu evenly coated with the sauce. Simmer for about 5 minutes to let the tofu absorb the flavor of the sauce.
- Season with an appropriate amount of salt and pepper according to your taste. Then pour 2 – 3 tablespoons of water – starch into the pan in a circular motion, and stir gently until the sauce thickens.
- Sprinkle the cut scallion sections on the top of the Mapo Tofu, and then transfer it to a plate. The hot and spicy Mapo Tofu is ready to be served. It is very suitable to be eaten with steamed rice.
